Case Study
After getting my Masters from Iowa State University in Hotel, Restaurant, and Institutional Management I worked for ISU Dining for 11 years before moving into my current role as the Culinary Food Science Coordinator. I have over 16 years of experience in teaching in the food labs in the Food Science and Human Nutrition Department. I work specifically with the Culinary Food Science courses for internships, food prep and professional skills development.
When I began teaching in the labs, I worked to streamline some of the materials to assist with the delivery of the materials. Adding a digital version of "The Basic Scientific Food Preparation Lab Manual" to the course makes it more accessible to the students throughout the lab experience. This also allows the students to download the manual for future use.
